Claim: 1. A method of detecting and/or measuring a biogenic amine or ammonia in a sample comprising: a. providing a complex of formula I MA-C≡N-MB  (I), wherein MA is a Ru(II) complex and MB is a lanthanide metal complex; b. bringing the vapor of the sample into contact with said complex of formula I, whereby said biogenic amine or ammonia displaces the MA-C≡N portion of the complex of formula I from the MB portion; and c. detecting the presence of displaced MA-C≡N by measuring a colorimetric response.
Claim: 2. A method according to claim 1 wherein the complex is of formula Ia MA-C≡N-MB-N≡C-MA  (Ia).
Claim: 3. A method for detecting and/or measuring a biogenic amine or ammonia in a food sample, comprising a. providing a complex of formula I MA-C≡N-MB(I), wherein MA is a Ru(II) complex and MB is a lanthanide metal complex; b. exposing the complex to a food product; and c. detecting any change in color, said detected change being indicative of the presence of biogenic amine or ammonia in, on or in association with, the food product.
Claim: 4. A method according to claim 3 wherein the complex is of formula Ia MA-C≡N-MB-N≡C-MA  (Ia).
Claim: 5. A method according to claim 2 comprising bringing the vapor of said sample into contact with a complex of formula Ic [chemical expression included] wherein R1 in each instance is selected from (C1-C6)alkyl, phenyl, halogen and (C1-C6)alkoxy, and wherein R1 may be located at any of the 3, 3′, 4, 4′, 5 and 5′ positions on the bipyridine rings.
Claim: 6. A method according to claim 5 comprising bringing the vapor of said sample into contact with a complex of formula II [chemical expression included] and detecting a colorimetric response.
Claim: 7. A method according to claim 5 wherein the sample comprises ammonia or an amine with aliphatic or aromatic amino functionality.
Claim: 8. A method according to claim 7 wherein the amine is selected from histamine, spermidine, putrescine, cadaverine and aniline.
Claim: 9. A method according to claim 1 wherein the complex is in a suitable solvent.
Claim: 10. A method according to claim 1 wherein the vapor of the sample is brought into contact with the complex.
Claim: 11. A method according to claim 1 wherein the colorimetric response is ultraviolet or visible light or emission.
Claim: 12. A process for preparing a complex of formula I [chemical expression included] comprising mixing a 2:1 ratio of K2[Ru(4,4′-Di-tert-butyl-2,2′-bipyridine)CN)4] and EuCl3.6H2O together in a 1:1 mixture of water and alkanol.
Claim: 13. A sensor for detecting and/or measuring the presence of a biogenic amine or ammonia in, on or in association with a fluid which comprises a complex of the general formula MA-C≡N-MB (I) and a support structure having a surface, the complex being attached to the support structure as a coating thereon, wherein said complex undergoes a detectable color change upon exposure to a biogenic amine or ammonia.
Claim: 14. The sensor of claim 13 wherein the structure comprises a plastic sheet, film or tray food packaging or a gas permeable film or membrane.
Claim: 15. A sensor of claim 13 wherein said complex is of formula II [chemical expression included]
Claim: 16. A sensor of claim 13 wherein the fluid contains ammonia or an amine with aliphatic or aromatic amino functionality.
Claim: 17. A sensor of claim 16 wherein the amine is selected from histamine, spermidine, putrescine, cadaverine and aniline.
Claim: 18. A sensor of claim 13 wherein the complex is in a suitable solvent.
Claim: 19. A sensor of claim 13 wherein the vapor of the fluid is brought into contact with the complex.
Claim: 20. A sensor of claim 13 wherein the colorimetric response is ultraviolet or visible light or emission.
