Salmon (Salmo salar Linnaeus) is one of the commonly edible fish in Taiwan, which is rich of nutrients for its beneficial effect for wound healing, belonging to a higher nutritional value of the food, but the lack of relevant studies for wound healing. Wound healing includes phases of coagulate, inflammatory, proliferative andremodeling, this is critical phase of proliferative, because the repair process to increase production of collagen formation, and the formation of granulation tissue and extracellular matrix (ECM) at the site of injury. The purpose of this study is to explore the effect of oral salmon on wound healing of phase proliferative in Sprague-Dawley rats.Salmon was boiled and freeze-dried for used. The proximentanalysis was assayed before experiment, crude protein 48.19 %, crude fat 47.72 %, NFE 4.10 %, hydroxyproline 735 mg/100g. In the experiment I (dose experiment), male SD rats were body weight of 300-400 g, each rats was created 3 wound on the back, rats are divided into three dose (0.94, 2.36, 4.72 g/kg BW/day) of salmon was given orally for six days and sacrificed on the 7th day. These wounds were used to determine the wound contraction. Results showed oral of 2.36 g/kg BW/day salmon, its wound contraction was significantly higher than the other two groups. In the experiment ΙΙ (oral experiment),wound model is as same as dose experiment, and then doses of results selection 2.36 g/kg BW/day, rats are divided into control and salmon group, given orally for ten days and sacrificed on the 4th, 7th, 10th day.These wounds were used to determine the PDGF, TGF-β, uronic acid,hexosamin, hydroxyproline, wound contraction. Results showed salmon group wound tissue were no significant effect on the 4th day.Wound tissue PDGF, TGF-β, uronic acid, hydroxyproline content increased, wound contraction also significantly rise on the 7th day. In addition to uronic acid and hexosamine, salmon group the rest was no significant effects on the 10th day.In summary, salmon was given orally 2.36 g/kg BW/day can improve significantly PDGF, TGF-β, uronic acid, hydroxyproline content on the 7th day. Proliferative phase of wound healing requires a large amount of collagen, construction repair wounds, salmon and salmon of hydroxyproline provide appropriate materials in wound repair, promote wound contraction, thereby helping wound healing.
