This study used reverse engineering technique to evaluate the volume of coconut water. The non-contact laser scanner is utilized to measure the data of point clouds and to get the shape of object. The reverse engineering software “Surfacer” and computer graphics software "Pro-Engineer" are integrated to build the coconut endocarp solid model. From the software interface, we can obtain the volume and surface area of coconut endocarp. Moreover, we can also obtain the data of physical characteristics and properties of coconut at the same time by experiment, which are the parameters to build the size of model. Then, the volume of coconut water can be computed by the parameters of coconut endocarp solid modeling volume, weight, endocarp thickness, endocarp density, kernel thickness, kernel density and coconut water density. This is the technology to transfer the block, size, shape, weight, mass, and area of the biology related organization to empirical formula. The maximum error of coconut water volume by comparing the value obtained from experiments and model analysis is 15.95﹪. The accuracy is roughly 85﹪to evaluate coconut water volume by the reverse engineering and inferential statistics. This study can provide alternative method to measure the biological properties.
