الوصف: Foodborne pathogenic microorganisms are a serious threat to food safety. Currently, traditional biochemical assays are facing a series of challenges in the detection of foodborne pathogens. In recent years, with the gradual development of CRISPR (clustered regularly interspaced short palindromic repeats) technology, the CRISPR/CRISPR-associated proteins (Cas) system with trans-cleavage activity has received much attention from researchers. In this article, the origin, classification and principles of CRISPR/Cas systems with trans-cleavage activity are summarized. This paper also reviews the versatile application of trans-cleavage CRISPR/Cas systems in the field of foodborne pathogens, and concludes with a discussion of the advantages, disadvantages and future directions of this technology.
