| الوصف: | Bu çalışma Kars İlinde bulunan süt işleme tesislerinin mevcut durumları; üretim kapasiteleri ve pazarlamaolanakları, çiğ süt temini, soğuk zincir ve yat seviyesi ile ilgili problemlerini tespit etme ve çözüm önerileri sunmaamacıyla yapılmıştır. Çalışmada kullanılan veriler, Kars ilinde üretilen sütün % 40’ının işlendiği Kars OrganizeSanayi Bölgesinde faaliyet gösteren 21 adet süt işleme tesisinden tam sayım yöntemine göre elde edilmiştir.Çalışma sonucunda işletmelerin % 11 kapasite ile çalışarak, ortalama 18 ton/gün süt işledikleri, en yüksek sütalım yatının soğuk zincirden elde edilen süte ödendiği (0.80 TL Lt-1), tesislerin çoğunluğunda (% 95) hijyenaçısından önemli olan krom süt taşıma ve depolama araçlarının bulunduğu, % 71’inin ambalajlama ünitesi olduğu,% 81’inin HACCP, ISO ve TSE belgelerine sahip oldukları ve pazarlama problemlerinin olmadığı belirlenmiştir.Süt işleme tesislerinin üreticilerden beklentileri hijyen, soğuk süt üretimi ve hayvan sayısının arttırılması, devlettenbeklentileri ise önem sırasına göre, soğuk süt üretimine ve süt sığırcılığına destek verilmesi (% 52.4), üreticilere sütüretimi konusunda eğitim verilmesi (% 28.6) ve kayıt dışı üretimle mücadeledir (% 19.0). ; This study was conducted in order to determine the current condition, production capacities and marketing opportunities of dairy processing facilities in the Province of Kars, as well as their problems about raw milk supply, cold chain, and prices levels and offer solutions. The data used in the study were obtained from 21 dairy processing facilities which were operating in the Organized Industrial Site of Kars, where 40% of milk produced in Kars province is processed, according to the complete inventory method.
