الوصف: Biološke opasnosti u lancu proizvodnje mesa specifične su za pojedine životinjske vrste. Sukladno promjenama u načinu uzgoja, preventivnim mjerama, sustavima nadzora i mjerama suzbijanja određene su bolesti životinja (zoonoze) danas gotovo beznačajne za sigurnost mesa. S druge strane, neke bakterijske i parazitarne bolesti se postojećim sustavima kontrole u klaonicama/farmama ne detektiraju na zadovoljavajućoj razini i time mogu predstavljati rizik za potrošače. Primjerice, u proizvodnji svinjskog mesa visok rizik predstavlja Salmonella spp., a srednji rizik Yersinia enterocolitica, Toxoplasma gondii i Trichinella spp. Danas se predlaže sustav osiguravanja sigurnosti mesa koji obuhvaća cijeli proizvodni lanac, a u kojem središnju ulogu ima risk manager koji bi analizirao sve relevantne podatke s farme (npr. rezultati seroloških pretraga), iz transporta, obora, pregleda prije klanja i poslije klanja i donosio odluke o modelu pregleda (vizualni ili tradicionalni post mortem), potrebi dekontaminacije (bakterijske opasnosti kod rizičnih svinja) ili smrzavanja mesa (paraziti). ; The biological hazards in the meat production chain are specific to animal species. In accordance with changes in farming methods, preventive measures, control systems and control measures, some animal diseases (zoonoses) are nowadays almost insignificant for meat safety. On the other hand, some bacterial and parasitic diseases are not detected by existing control systems in abattoirs / farms and may therefore pose a risk to consumers. For example, in the production of pork meat, Salmonella spp., Yersinia enterocolitica, Toxoplasma gondii and Trichinella spp. are of public-health importance. Today, a meat safety system is proposed that covers the entire production chain, with a central role played by a risk manager. The specific tasks of risk manager would be the analysis of all relevant food chain information (eg serological test results), data related to animal transport, lairage, pre-slaughter and post-slaughter findings.
