الوصف: Rapid Prototyping, Development and Evaluation (RPDE) are investigating alternative victualling methods for submarines and surface ships of the Royal Australian Navy (RAN). Emerging food processing technologies were identified and considered in the context of the RAN victualling system and naval food culture. Technologies such as cook chill - heat treated refrigerated food (HTRF) - have a shelf-life up to 2 months and are currently available. Other technologies, such as high pressure processing (HPP) and microwave assisted pasteurisation (MAPs) promise 'fresh-like??? foods with extended shelf-life under chilled storage. While other developing technologies such as microwave assisted thermal sterilisation (MATS) and high pressure thermal processing (HPTP) aim to produce extended shelf-life foods which are fresh-like and shelf-stable. Although the technology readiness levels (TRLs) of the emerging technologies estimated to be 6, key decision dates of some future naval platforms are still about 5-10 years away. These technologies might then reach maturity within this timeframe. Opportunities, risks and mitigation strategies are also discussed.
