This investigation aims at proposing a procedure that enables getting the porcentage from attraction of the accessorial services in the extra catering net in tourist destinies, as well as the attributes to determine it. The general procedure developed counts on a collection of tools adjusted to the empresarialcuban reality, in order to identify the factors that inhibit the achievement of superior results and to take decisions that allow the elevation of the attraction of these services as a base for its improvement. Amond the techniques used on this project we have Delphi method, opinion poll, not probabilistic sampling, questionnaire and the use of different software for processing the information. It applied over the proposed procedure to a representation of the restoration services of the touristic destiny of Varadero, in order to determine the main objective of improvement from the position of attributes of attraction in the matrix grade-importance of the perceived presence. ; Esta investigación tiene como objetivo proponer un procedimiento que permita obtener el índice de atractivo de los servicios complementarios en la red extrahotelera en destinos turísticos, así como los atributos para determinarlo. El procedimiento general desarrollado cuenta con un conjunto de herramientas ajustadas a la realidad empresarial cubana, para identificar los factores que inhiben el logro de resultados superiores y tomar decisiones que favorezcan la elevación del atractivo de estos servicios como base para su mejoramiento. Entre las técnicas empleadas se encuentran el método Delphi, encuesta, muestreo no probabilístico y el empleo de diferentes softwares para el procesamiento de la información. Se aplicó el procedimiento propuesto a una muestra representativa de los servicios de restauración del destino turístico de Varadero, determinándose las prioridades de mejora a partir de la ubicación de los atributos de atractivo en la matriz importancia-grado de presencia percibida. |
