الوصف: Kulen je vrsta trajne fermentirane kobasice koja se u Slavoniji i Baranji proizvodi već dugi niz godina i dio je naše tradicije koja se prenosi s koljena na koljeno. Nastaje dimljenjem smjese usitnjenog mesa, masnoće i začina u svinjskom crijevu. Predmet ovog rada su stavovi mladih potrošača prema kulenu, stanje svinjogojstva u Republici Hrvatskoj te opis kako je proizvodnja kulena izgledala nekada, a kako izgleda u današnje vrijeme. Provedena je i anketa kojom su ispitani stavovi mladih potrošača prema kulenu. Najzastupljenija dobna skupina anketiranih potrošača je 23 godine i 24 godine. Najveći broj ispitanika u kućanstvu ima primanja veća od 7000,00 kuna mjesečno i spremni su izdvojiti 150,00 do 200,00 kn/kg za domaći kulen. Za proizvođače kvalitetnog domaćeg kulena ta cijena nikako nije isplativa za proizvodnju, jer su ulaganja na godišnjoj razini puno veća. Manji broj ispitanika kupuje kulen, a veći proizvodi vlastiti. Veći dio potrošača koji kupuju kulen odlaze na OPG-ove i tamo ga kupe što je pozitivno za male proizvođače kulena.
Kulen is a type of permanent fermented sausage that has been produced in Slavonia and Baranja for many years and it is part of our tradition that is passed down from generation to generation. It is formed by smoking a mixture of minced meat, fat and spices in pork intestine. The subject of this paper are attitudes of young consumers toward kulen, the state of pig farming in the Republic of Croatia and a description of how the production of kulen looked like before, and how it looks like today. A survey was conducted to examine attitudes of young consumers toward kulen. The most common age group of respondents are those who have 23 and 24 years. The largest number of respondents in their household have an income over 7000.00 kunas per month and are willing to set aside 150.00 to 200.00 kn/kg for homemade kulen. For producers of quality domestic kulen, that price is not at all profitable for production, because annual investments are much higher. Minority of respondens buy kulen, while majority produce their own. Most of the consumers who buy kulen go to family farms and they buy kulen there, which is positive for small producers of kulen
