| Abstract (English): |
The varieties of small fruits of the species chokeberry (Aronia Melanocarpa) represent a rich source of phenolic antioxidants for human nutrition. This study presents the results of determining the total content of phenolic compounds, anthocyanins and selected technologically important parameters of two varieties grown in the Czech Republic: Nero and Viking. Based on the performed analyzes, the content of total phenolics was 6.23 ± 0.59 g.L-1 and 6.70 ± 0.63 g.L-1 (gallic acid equivalent), total anthocyanins 2.42 ± 0.10 g.L-1 and 2.15 ± 0.50 g.L-1 (cyanidin-3-galactoside equivalent) and reducing saccharides 84.44 ± 1.96 g.L-1 and 107.67 ± 2.64 g.L-1. The results of the study show that the two monitored varieties are comparable in this respect. [ABSTRACT FROM AUTHOR] |

Odrůdy drobného ovoce druhu aronie (Aronia melanocarpa) představují bohatý zdroj fenolových antioxidantů pro lidskou výživu. Tato studie prezentuje výsledky stanovení celkového obsahu fenolových sloučenin, anthokyanů a vybraných technologicky významných parametrů dvou odrůd vypěstovaných v ČR: Nero a Viking. Na základě provedených analýz byl zjištěn obsah celkových fenolových kyselin 6,23 ± 0,59 g.l-1 a 6,70 ± 0,63 g.l-1 (ekvivalent kyseliny gallové), celkových anthokyanů 2,42 ± 0,10 g.l-1 a 2,15 ± 0,50 g.l-1 (ekvivalent kyanidin-3-galaktosidu) a redukujících sacharidů 84,44 ± 1,96 g.l-1 a 107,67 ± 2,64 g.l-1. Výsledky studie ukazují, že obě sledované odrůdy jsou z tohoto hlediska srovnatelné. [ABSTRACT FROM AUTHOR] |
