The Hague ruling at the end of 2012 in relation to the dispute between Colombia and Nicaragua over the San Andrés Sea leaves, among others, the problem of the capture and commercialization of marine products by the inhabitants of these islands. The objective of this work is to analyze the impact of the development of a fish and shellfish culture both in the commercialization to restaurants that are based on the sale of these products and in the traditional gastronomy of families on the island. We use a mixed research methodology with surveys and interviews, which were held in 2019 on San Andrés Island-Colombia. It was found that 90% of the islanders were in favor of the aquaculture project, justifying their response in the reduction of indiscriminate fishing, also protecting marine species. The locals are also uneasy about the collapse of the local gastronomy, as a consequence, precisely of the shortage of raw materials. Thus, the development of an aquaculture project in this area, from the perspective of the inhabitants of the archipelago, would bring benefits to the economy of the place and, of course, to the gastronomic task, if it is done within the legal framework. El fallo de La Haya de finales de 2012 en relación con la disputa entre Colombia y Nicaragua por el mar de San Andrés deja, entre otros, la problemática de la captura y comercialización de productos marinos por parte de los habitantes de estas islas. El objetivo de este trabajo es analizar el impacto del desarrollo de un cultivo de peces y mariscos tanto en la comercialización a restaurantes que se basen en la venta de estos productos como en la gastronomía tradicional de familias en la isla. La metodología de investigación es de tipo mixto y como instrumentos se usaron encuestas y entrevistas, las cuales se desarrollaron en 2019 en la Isla San Andrés-Colombia. Se encontró que el 90% de los isleños a los que se les preguntó sobre el proyecto de acuicultura se mostró a favor de este, justificando su respuesta en la reducción de la pesca indiscriminada, protegiendo, así mismo, las especies marinas; se suma a lo anterior el argumento que la acuicultura abastecería la demanda que en la actualidad se presenta. Los lugareños también se sienten intranquilos por el desmoronamiento de la gastronomía local, como consecuencia, precisamente del desabastecimiento de la materia prima. Así las cosas, el desarrollo de un proyecto de acuicultura en esta zona, desde la perspectiva de los habitantes del archipiélago, traería beneficios a la economía del lugar y, por supuesto, a la tarea gastronómica, siempre que se haga dentro del marco legal.
